What?
The determining role of water activity in developing microbial growth in food, cosmetics, powders, fertilizers, medicines, etc., cannot be underestimated. You will gain insights into the theory behind water activity and its effects on production processes and preservation (Markus Bernasconi, Novasina). You will receive a practical explanation of water activity in day-to-day practice (Roland Vossen, Pedak), and chocolatier Paul Wagemaker (Chocolate Planet) will explain in his presentation how he uses Aw value to optimize the quality of his product (case study). Finally, we will provide useful tips regarding the maintenance and calibration of Aw meters.

Especially designed for quality managers, product managers, and laboratory technicians who want to understand the determining role of Aw value in production processes. This training is interesting for those who already use an Aw meter, as well as for people who want to learn more about water activity in combination with their own product.
